Ladies,wait-wait-wait, do not run away hearing the name BAINGAN OR  EGGPLANT. Believe me, you will give me blessings for this recipe, and will go on to the level of perfection, once you start making this one. Although I have prepared this recipe a number of times, the one that my childhood friend Pracheta prepares is the best of them all….. So I thought… why not share this one with you all.

This Recipe is an authentic  Dahi Baingan Recipe -  Easy, Quick and Simple Healthy Oriya Food: and tastes Superb and is healthy too. I would recommend everyone to try it once for their family and have my word for sure; your hubby won’t stop licking his fingers. It takes very little time and the ingredients and preparation are to the minimum. So, if you really want to impress that special guest or the very special person, even your Ma-in-law….. :D

This is a perfect side dish, to accommodate in to the Lunch or Dinner menu along with Ghanta tarkari, Tomato Chutney with Dates and Plain white rice with just the Rice Kheer or payasam as the desert. So, let’s go on, to the specific details.

 

 DAHI BAINGAN – HEALTHY ORIYA/ ODIA VEG RECIPE. 

 

INGREDIENTS: for 4 persons

Preparation time: 13 minutes.

  • Eggplant (baingan)- 2 medium
  • Curd-250 gms.
  • Vegetable oil- to fry
  • Salt- to taste
  • Sugar- 2tsp.
  • Chana dal- handful
  • Curry leaves- 8-10
  • Yellow food colour- 2drops, optional.
  • Dry red chilli- 1
  • Tejpatta/ bay leaf-1

PREPARATION FOR TADKA OF   DAHI BAINGAN: ORIYA/ ODIA RECIPE

Paanch Phoran (phutana) – A mix of five spices. Cumin/ zeera, mustard/sarson,  methi/ fenugreek seeds, kalazeera, saunf.

 

 DAHI BAINGAN : METHOD FOR ORIYA RECIPE 

  • Cut the Eggplant/ baingan, into medium thin long slices.
  • Heat oil in a pan and deep fry them, till they are done.
  • In another pan, heat 2tsp oil.
  • When hot, add the chana dal, Paanch Phoran, curry leaves, dry red chilli, tejpatta and sauté’ for 20 seconds.
  • Add the eggplants/ baingan, salt, sugar and mix well.
  • To avoid curdling of the curd, have it mixed smoothly in another bowl.
  • Add all the mixture together and serve them when cold.

This is going to be Delicious, believe me.. :D , this ORIYA- DAHI BAINGAN , will have your family members, licking their plates for more.

Cheer up, Diabetes patients… you can have this yummy Dahi- baingan in oriya style too… just skip the Sugar part and lol! there you are… with all the goodness this recipe brings forth to you, A HEALTHY, SIMPLE AND TRULY ORIYA IN STYLE!
