Kids snacks, PIZZA with Bread,semolina, curd, fresh cream and refined oil. These are the main ingredients for making BREAD PIZZA.

Time to serve: 7 minutes flat   :D

As a Mom of two children, it is sometimes very- very difficult to manage time, work and kids all at once. As kids grow up, they tend to experiment with foods….. Hence it is all the more difficult for mothers to provide the kids with the right nutrition and a balanced diet that would be tasty and healthy at the same time. For the Kids corner this time, I am uploading the healthy kid’s food recipe, THE BREAD PIZZA, prepared by my friend Smita Sony. It has all the ingredients for not only Kids snacks, but for a happy Kids lunch meal too. And bet you!!!!!!!!!! You will be one of the few lucky Mom’s in the Universe, who will have kids asking for more and more and more………

There are only a couple of steps required and with the least possible ingredients, you are about to prepare a wholesome Kids nutrition filled hearty meal. Let’s start rolling the 14  ingredients:

 

INGREDIENTS FOR   Nutritious  Snacks, Kids food recipes:  BREAD PIZZA.

 

  1.  Whole wheat bread- 4 slices
  2. Semolina-1/4th tea cup
  3. Curd- ½ cup
  4. Cream/ malai- ½ cup
  5. Pepper- 1’4th teaspoon
  6. Salt- to taste
  7. Chilli powder- a pinch
  8. Onion-1/2 cup sliced very small
  9. Bell-pepper/ capsicum- 1/4th cup sliced very small
  10. Tomatoes- 1/4th cup sliced very small
  11. Green chillies- optional
  12. Oregano- optional
  13. Oil/ butter/ghee- 2tsp.
  14. Parsley/coriander leaves- handful

All these items are available in our kitchen; one can add or subtract and increase or decrease the quantity as per one’s own wish. Now let’s move on to the method.

 

METHOD FOR  Nutritious  SnacksKids food recipes:  BREAD PIZZA.

 

  1. Take a bowl, add all the ingredients together and mix properly.
  2. If the mixture is too liquidly, then add a little semolina to it, if it is a bit solid, then add curd and mix properly.
  3. Leave the mixture for 15 minutes.
  4. Take a slice of bread and apply a thick layer of mixture to one side as you generally apply jam or butter.
  5. Heat the pan and place the slice with the mixture upside down and let it toast for 2 minutes.
  6. Apply oil/butter/ghee to the upper side and turn back. Let it toast for 1 minute, and you are done. Garnish with parsley or coriander leaves and serve.
  7. Follow the same process with the left slices of the bread.

Serve with cheesy dips, chutneys or plain tomato sauce with a little salad on the side, anyways it will be yummy. There are only 1-2-3-4-5-6-7 steps required and, children will love it dearly. So, go ahead try this ahead right now.

RICE VERMICELLI RECIPE

RICE VERMICELLI: Easy Breakfast Recipes Indian.

 

Rice Vermicelli is made from rice noodles, green vegetables and Indian spices. Rice vermicelli is healthy, nutritious and Kids love it.

RICE VERMICELLI THE ORIYA STYLE

Rice vermicelli is one of those healthy and nutritious meals, which you would love to, have every now and then. Rice is a major component of the South Indian Breakfast recipes. Rice is the staple food in South India as it is in the east of India, in Orissa and Bengal, and it is widely used for breakfast, lunch and dinner.

There are a number of ways to prepare breakfast recipes with rice…. Today I will divulge the details about the simple, yummy and the sumptuous breakfast recipe: RICE VERMICELLI THE INDIAN STYLE. It is easy to prepare, simple to make and overtly nutritious…. Overall an added advantage on HEALTHY MEALS :D . It is simply irresistible.

I would love to recommend this to all those souls who are down with high cholesterol and are advised to stay away from oils and non-vegetarian meals… this is the perfect combo RICE VERMICELLI with a cup of tea or coffee, THE ORIYA STYLE!!!

Let us get to work on the details:

 

 RICE VERMICELLI THE INDIAN  STYLE.

 

PREPARATION TIME: 20 minutes

COOKING TIME: 6 minutes.

SERVES: 4

 

Ingredients:

  • Rice vermicelli: 1 packet
  • Assorted vegetables:
  • French beans, peas, tomatoes, cauliflower, capsicum or bell pepper etc: 2 cups, sliced thinly.
  • Turmeric: 2 tsp.
  • Vegetable oil: 4tsp.
  • Green chillies: 4, thinly sliced
  • Salt: to taste

 

FOR TADKA: CURRY LEAVES OR CURRY PATTA, PAANCH PHORAN, AND DRY RED CHILLIS.

 

METHOD FOR: RICE VERMICELLI THE INDIAN STYLE.

 

  1. Boil the rice vermicelli in hot water till they are just soft. Drain the water and keep aside.
  2. Heat oil in a pan, add curry leaves, paanch Phoran or phutana, onion, red chilli and sauté for 1 minute.
  3. Add the vegetables and cover the lid of the pan to cook them.
  4. Add turmeric, salt and the boiled rice vermicellis.
  5. Mix them together and serve with TOMATO CHUTNEY WITH DATES or HEALTHY VEGETABLE DIPS.

Either way, it is too delicious to neglect…. Go on… have them in your next meal :D

Kheer made with Paneer or Chenna, milk, sugar, whole dryfruits and saffron/ saffron essence.

HELLOO LADIES!

I am here once again with a delicious, easy to make and serve KHEER RECIPE – “PANEER KHEER”.

Kheer is an integral part of THE INDIAN and ORIYA CUISINE, and whether it is RICE KHEER OR PANEER KHEER, masses love to savour it unconditionally………….

In my earlier version of KHEER, I had used rice as my main ingredient to prepare the RICE KHEER. And in this version of PANEER KHEER, PANEER or CHENNA as it is widely known in ORISSA and WEST BENGAL is used with no rice at all. It is absolutely an easy and a very simple recipe that can be prepared in 10 minutes flat, if the Milk is pre boiled. Many Oriya ladies have this Paneer Kheer, an integral part of their Lunch or dinner menu… And if you have any inhibitions then, do not panic… I have the perfect recipe to get you going…

Let’s start with the Recipe:

PANEER KHEER

 

Ingredients:

  • Fresh Paneer /chenna- 250 grams.
  • Sugar-100 gms. Or according to the sweetness you desire.
  • Ghee-2 tsp.
  • Green cardamoms, nutmeg- 3
  • Dry-fruits – ½ small bowl or handful, sautéed in ghee.
  • Milk- 1 litre, reduced to half.
  • Saffron strands or yellow food colour- 2 drops
  • Rose/ pineapple essence-  2drops.

 

METHOD:

 

  • Reduce the milk to half. Add sugar and cardamom and nutmeg.
  • Dissolve and add saffron or food colour to the boiling milk with the dry fruits.
  • Add the Paneer and switch off the flame.
  • Add pineapple or the rose essence and keep aside to cool.

 

PANEER KHEER..the oriya recipe!

 

Serve cold with GHANATA TARKARI, BEANS AND POTATO, PAKORAS, RICE and everything that is hot.

Finally enjoy!

This PANEER KHEER is going to take everybody’s breath away.

GAJAR HALWA WITH CONDENSED MILK

GAJAR HALWA WITH CONDENSED MILK

 

 

Gajar halwa with Condensed Milk or Carrot halwa with Condensed Milk.

 5 easy steps to prepare the most sought after WINTER SPECIAL! 

 Yummy, delicious and the most home-made sweet dish in the winter season, in India… Not to miss out the festival of Holi! This gajar halwa with condensed milk recipe, can be savored with other  sweet dishes, like  Rice Payasam or the rice Kheer, as you prefer.

 Let us roll away the ingredients.

 

GAJAR HALWA WITH CONDENSED MILK

 

INGREDIENTS: for 4 persons, time 15 minutes.

  • Gajar/ Carrot- 250 grams
  • Sugar- 125 grams
  • Condensed milk-75 grams
  • Ghee- 3big spoons
  • Salt- 1 pinch
  • Tejpatta/ bayleaf- 1
  • Garam masala- whole/ cardamom(big and small): 5
  • Dry-fruits- ½ katori

METHOD:

  1. Grate the gajar or carrots, (to be pregrated at leisure time.
  2. Add ghee into a pan, when hot; add the tejpatta, cardamoms and sauté. Add the dry-fruits and sauté for ½ minutes.
  3. Now add the gajar, sugar, salt, condensed milk, stir for 3 minutes on high flame and cover the pan with a lid, to have the gajar cooked to perfection.
  4. Take the lid off after 10 whole minutes, till the gajar is cooked in it’s juices properly.
  5. Continuously stir till the liquid evaporates and the consistency is dry. Garnish with red cherries or cream and Serve hot or cold.

I hope you got the idea, how very simple, yet delectable dish this gajar halwa with condensed milk is. Try at home this Holi, the festival of colours and take the patting at the back.

 This GAJAR HALWA WITH CONDENSED MILK brings back fond memories of my childhood spent in Lucknow. It was a weekly affair during the winters, as Gajar would be at their cheapest, of me and my Mamma. I would grate all the gajar and she would then direct me the method… the shortest possible method to make them. I still miss those days, but not the gajar halwa anymore :D . Since my elder daughter is crazy for authentic Indian food, I try to prepare the GAJAR HALWA WITH CONDENSED MILK, twice every week during the winters.

DIABETES GAJAR HALWA WITH Khoya.

All the Ingredients and the methods will be the same. Just take out the sugar and add the Sugar-free powder, cut out on the Condensed milk and add instead the Khoya, 100 grams…as per the taste. Rest of the Steps 1,2,3,4,5,6 will be exactly be the same.

This is healthy, not very rich with butter or ghee and very much a diabetic Special sweet recipe.. if we prepare it keeping our loved ones in mind :D

COCONUT COOKIES MACAROONS RECIPE

COCONUT  COOKIES MACAROONS

My elder daughter does not have a sweet tooth, but the younger one, sure has… Sometimes I try hard to balance between the sweet and the sour… so that both enjoy the deserts immensely. This recipe of Coconut cookies macaroons is easy, simple and delicious….. If you happen to be a non-sweet lover… sad… then also, you can have a couple of these macaroons and believe me, you will ENJOY! If you are a little sweet oriented, you can have it with Rice Kheer, as well… They do complement each other fairly.

Lets move on to the recipe !

COCONUT COOKIES MACAROONS RECIPE

Preparation time: 8-10 minutes

Serves: 8-9 persons, makes 35-38 coconut macaroons.

 

INGREDIENTS

 

  • Shredded and grated coconut- 2
  • Sugar- 6 tsp.
  • Sweetened condensed milk- 100 ml.
  • Salt- 1 pinch
  • Vanilla extract- 2tsp.

 

METHOD;

  • Grate the coconut
  • Add all the ingredients in a bowl, mix well.
  • Drop 1 tsp of batter on to the baking sheets.
  • Bake at 180 degree centigrade or 350 degree F for 7-8 minutes.
  • Let the Coconut Macaroons cool, before you remove them from the baking sheets.

In Southern India, coconut is a staple food. Many deserts, sweets are made with Coconut being an integrate part of it…. Go on, try this.:D
