RICE VERMICELLI: Easy Breakfast Recipes Indian.

RICE VERMICELLI THE ORIYA STYLE

Rice vermicelli is one of those healthy and nutritious meals, which you would love to, have every now and then. Rice is a major component of the South Indian Breakfast recipes. Rice is the staple food in South India as it is in the east of India, in Orissa and Bengal, and it is widely used for breakfast, lunch and dinner.

There are a number of ways to prepare breakfast recipes with rice…. Today I will divulge the details about the simple, yummy and the sumptuous breakfast recipe: RICE VERMICELLI THE INDIAN STYLE. It is easy to prepare, simple to make and overtly nutritious…. Overall an added advantage on HEALTHY MEALS :D . It is simply irresistible.

I would love to recommend this to all those souls who are down with high cholesterol and are advised to stay away from oils and non-vegetarian meals… this is the perfect combo RICE VERMICELLI with a cup of tea or coffee, THE ORIYA STYLE!!!

Let us get to work on the details:

 

 RICE VERMICELLI THE INDIAN  STYLE.

 

PREPARATION TIME: 20 minutes

COOKING TIME: 6 minutes.

SERVES: 4

 

Ingredients:

  • Rice vermicelli: 1 packet
  • Assorted vegetables:
  • French beans, peas, tomatoes, cauliflower, capsicum or bell pepper etc: 2 cups, sliced thinly.
  • Turmeric: 2 tsp.
  • Vegetable oil: 4tsp.
  • Green chillies: 4, thinly sliced
  • Salt: to taste

 

FOR TADKA: CURRY LEAVES OR CURRY PATTA, PAANCH PHORAN, AND DRY RED CHILLIS.

 

METHOD FOR: RICE VERMICELLI THE INDIAN STYLE.

 

  1. Boil the rice vermicelli in hot water till they are just soft. Drain the water and keep aside.
  2. Heat oil in a pan, add curry leaves, paanch Phoran or phutana, onion, red chilli and sauté for 1 minute.
  3. Add the vegetables and cover the lid of the pan to cook them.
  4. Add turmeric, salt and the boiled rice vermicellis.
  5. Mix them together and serve with TOMATO CHUTNEY WITH DATES or HEALTHY VEGETABLE DIPS.

Either way, it is too delicious to neglect…. Go on… have them in your next meal :D

5 steps to make INDIAN POTATO & BROAD BEANS IN MUSTARD PASTE.

MUSTARD RECIPES

 

Potato and Broad/Butter Beans OR Shimba in mustard paste with curd recipe.  

 

Traditional Oriya/ Odia Recipe with *Phutana*,*besara*, *Mustard paste* and Broadbeans or Shimba.

 

POTATO & BROAD BEANS IN MUSTARD PASTE.

 

 

I am a big fan of mustard paste. I take excuses to prepare healthy vegetable recipes that have this special ingredient as the SHOWSTOPPER…. Believe me, eventually the recipe is going to be the one, that everyone would look forward to…………..

 In parts of rural India, mustard paste is the key ingredient to making dishes that almost has a very less or no amount of oil… and to tell you the secret of the rural people, they have less cholesterol and heart problems as compared to the urban masses….. Using so less amount of oil and spices that you can even taste the ingredients one by one…… In Orissa, we call the Mustard paste as “BESARA” and uses it for the fish preparation too.

 I will be uploading the recipe for the FISH IN MUSTARD PASTE, a little later, but for now, it’s the Potato and Broad/Butter Beans OR Shimba in mustard paste with curd recipe. I have modified it a little by adding curd to bring out the tanginess, instead of tamarind or lots of tomatoes.

 

 

Potato and Broad/Butter Beans OR Shimba in mustard paste with curd recipe.  

 

Preparation Time:10 minutes.

Cooking time: 15 minutes- 20 minutes

 

Ingredients:

  1. Potatoes: 3 big
  2. Broad/Butter Beans OR Shimba: 150 grams
  3. Tomatoes: 1 big
  4. Curd-1/2 tea cup
  5. Mustard oil: 2 spoons
  6. Turmeric: 1 spoon
  7. Salt to taste
  8. Red chilli powder- 1 ½ spoon
  9. Dry Red chilly: 1
  10. Tejpatta: 1

For tadka: paanch phutana or paanch Phoran, 1 tsp,

 

HOW TO MAKE THE MUSTARD PASTE????

  • Yellow mustard or banarasi rai: 2 tsp.
  • Cumin or zeera: 2 tsp.
  •  Dry Red chilli: 2
  • Ginger: ½ inch

Make a paste of the above ingredients. You can store it in the fridge for a couple of days and can reuse the paste as and when needed.

 

METHOD:

 

  1. Peel the potatoes, cut them into thin slices or into small cubes as per your discretion.
  2. Wash and keep aside the samba or the broad beans.
  3. Add oil in a pan, when hot, add the paanch Phoran and the dry red chilli. Sauté.
  4. Add the tomatoes and sauté for 1 minute, until soft.
  5. Now add the mustard paste, turmeric, chilli powder, salt and the curd and continuously stir slowly till the oil separates from the masala.
  6. Add the potatoes and the samba or the beans and sate for a minute or so, coating well the vegetables with the masala. Add 1 ½ cup of water and cover with lid for 10 minutes or till the vegetables are done.

Garnishing is optional with coriander leaves.

Serve with plain white rice or rotis, and for side dishes have tomato chutney with dates, for sweet dish have Rice payasam. Simple, delicious and way too healthy.

This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Protein, Phosphorus, Copper and Manganese, and a very good source of Folate.

Being a diabetic patient does not necessarily mean, you salivating for your favourite deserts, while others are devouring them relishing. I have presented here some Desert recipes that are not only easy , healthy, quick , gluten free recipes, that are very easy to prepare and super tasty to have. These SUGAR FREE FOR DIABETES recipes are not only for the diabetic patients, but for all those calorie conscious individuals, who are weight- watchers and do not want to put on flab, without depriving the best of what life offers……………… :D

I will be starting with some of the basic, easy SUGAR FREE FOR DIABETES recipes and will slowly graduate to the complex one, once you are well versed with the cooking skills. So lets start off with these ones immediately. You can have one of these planned for your next Menu….

 

SILVERED ALMONDS WITH PEARS:

 

Slice and core some Pears. Toast silvered Almonds in a toaster oven until Golden for about 30 seconds and fills them in the Pear core. Diabetic Pear desert recipe is ready.

 

COOKIES FOR DIABETES:

 

Mix one fourth cup all-purpose flour, half cup oats, 1 tsp salt and 4 tsp vegetable oil. Make crusty dough by mixing water. Make small flat cookies and bake for 10 minutes.

 

MUFFINS FOR DIABETES:

 

Peel two apples and coat them with orange juice. Stuff with raisins and sprinkle cinnamon on top. Bake 25-30 minutes till they become soft. Diabetic Muffins ready to eat….

 

LOW CALORIE SHAKE FOR DIABETES:

 

Diabetics can make a low calorie shake by blending some low fat yogurt with 1/4th cup skimmed milk, some strawberries and a teaspoon of honey.

 

LEMONADE FOR DIABETES:

 

Mix juice of 2 lemons with two cups of water and one teaspoon of honey, drinking this lemonade regularly can help in managing diabetes.
